There are significant issues with excessive bycatch when shrimp are captured in the wild, and with pollution damage done to estuaries when they are used to support shrimp farming. Many shrimp species are small as the term shrimp suggests, about 2 cm (0.79 in) long, but some shrimp exceed 25 cm (9.8 in). Larger shrimp are more likely to be targeted commercially and are often referred to as prawns, particularly in Britain.

Fajita Marinade Ingredients:

2 Tbsp lime juice

4 cloves of Garlic, minced

1 Tbs Boullion

2 Teaspoons Ground Cumin

1/2 Teaspoon Onion Powder

1/2 Teaspoon Mexican Oregano

1 Teaspoon Smoked Paprika

1/4 cup olive oil

Freshly ground black pepper to taste


Shrimp Fajita Ingredients:

2 lbs large shrimp, peeled, deveined

2 bell peppers, (any color) sliced

1 medium onion, sliced


To serve:

Small flour tortillas

Jalapeno Ranch


Jalapeno Ranch Recipe

Ingredients:

1 cup sour cream

2 Tbsp cilantro, chopped

1 jalapeno, seeded and chopped (2 Tbsp)

2 tsp lime juice, freshly squeezed

1 tsp salt

1 tsp onion powder

1 tsp garlic powder


Shrimp Fajitas Instructions:

In a small bowl, combine marinade ingredients.

Slice bell peppers, and onions the same 1/3” thickness.

Add the marinade to the shrimp, and stir to combine.

Heat a large heavy pan over medium heat with 2 Tbsp oil and when hot, add shrimp in a single layer and saute for 1-2 minutes per side or just until cooked through and no longer translucent then promptly transfer to a plate.

In the same pan, add vegetables and saute until soft and golden brown at the edges (10 min), stirring occasionally, then turn off the heat.

Serve fajitas with warmed or toasted tortillas with jalapeno ranch, or your favorite sauce.


Jalapeno Ranch Instructions:

Combine all dressing ingredients in the bowl of a food processor, blender, or magic bullet and blend until creamy and smooth (about 30 seconds).


Recipe Notes

* To Toast Tortillas: Place individual tortillas on a hot dry skillet, griddle, low gas flame, or grill for about 15 seconds per side until lightly browned.

*To Warm Tortillas: Wrap a stack of 5 in a damp paper towel and microwave 30 seconds at a time until warm.
