This Lazy Day Breakfast — Sheet Pan Eggs & Bacon is one of those recipes you'll find yourself making over and over again. It's simple, delicious, and always gets rave reviews. Whether you're a beginner or a seasoned cook, you're going to love how easy and tasty this turns out!

Did You Know?

Partially cook the bacon first for 8-10 minutes before adding eggs so they finish at the same time.

Pro Tips

Create shallow wells with cooked veggies or bacon strips before cracking the eggs to keep them in place.

Frequently Asked Questions

1. What temperature should I bake sheet pan eggs and bacon?

400°F is ideal. The bacon gets crispy and the eggs set perfectly without overcooking. Place the bacon on first since it takes longer.

2. How do I prevent the eggs from overcooking on the sheet pan?

Crack the eggs onto the sheet pan during the last 10-12 minutes of baking. They cook quickly at 400°F and should have set whites with slightly runny yolks.

3. Can I add other ingredients to the sheet pan?

Absolutely — hash browns, sliced tomatoes, sausage links, mushrooms, and bell peppers all work great. Add items based on their cooking time.

4. Do I need to flip the bacon on the sheet pan?

No flipping needed. The oven heat circulates around the bacon, crisping both sides evenly. Use a wire rack on the sheet pan for extra crispiness.

5. How do I keep the eggs from spreading too thin?

Create small wells by pushing other ingredients aside, or use silicone egg rings on the sheet pan. You can also fold up parchment paper edges to create barriers.

6. Can I use turkey bacon for this recipe?

Yes, turkey bacon works but cooks faster and does not render as much fat. Check it 3-4 minutes earlier than regular bacon to avoid burning.

7. How many servings does one sheet pan make?

A standard 18x13 sheet pan comfortably fits 6-8 strips of bacon and 4-6 eggs, serving about 3-4 people for a complete breakfast.

8. Can I prep this the night before?

Lay the bacon on the sheet pan, cover with plastic wrap, and refrigerate. In the morning, just pop it in the oven and add eggs near the end.

9. What type of sheet pan works best?

A heavy-duty rimmed half-sheet pan (18x13 inches) lined with parchment paper or foil. The rim catches the bacon grease and prevents messy spills.

10. How do I clean up the bacon grease?

Line your sheet pan with foil or parchment before cooking. After baking, let the grease cool slightly, then peel off the liner and discard. Easy cleanup.

Ingredients Method Notes

Ingredients

  • 12 slices thick-cut bacon
  • 10 large eggs
  • ½ cup whole milk
  • 1 cup shredded cheddar cheese or your favorite cheese blend
  • 1 cup diced bell peppers any color
  • ½ cup diced red onion
  • ½ cup cherry tomatoes halved
  • 2 tablespoon fresh parsley chopped (plus extra for garnish)
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • Salt & black pepper to taste
  • Non-stick cooking spray or parchment paper

Method

  1. Prep the Sheet Pan Preheat oven to 400°F (200°C). Line a rimmed sheet pan with parchment paper or lightly coat with non-stick cooking spray.
  2. Bake the Bacon Arrange bacon slices on one side of the sheet pan. Bake for 12–15 minutes, or until starting to crisp.
  3. Mix the Egg Base While bacon cooks, whisk eggs, milk, garlic powder, smoked paprika, salt, and pepper in a large bowl. Stir in shredded cheese, diced peppers, onion, and cherry tomatoes.
  4. Add Eggs to the Pan Carefully remove bacon from oven. Tilt the pan slightly to drain excess fat if needed (leave just a little for flavor). Pour egg mixture onto the empty side of the sheet pan.
  5. Finish Baking Return to oven and bake for 15–18 minutes, or until eggs are set and bacon is fully crispy.
  6. Serve & Garnish Slice the baked eggs into squares or rectangles, serve alongside bacon, and sprinkle with fresh parsley.
