Quick and Easy Chicken Tacos

Chicken Marinade

8 boneless skinless chicken thighs or 4 boneless chicken breasts

1 tsp garlic powder

1 tsp kosher salt

1 tsp smoked paprika

1 tsp dried parsley

1/2 tsp black pepper or to taste

1/4 tsp cayenne pepper

3 tbsp lime juice

3 tbsp olive oil

1 tbsp liquid smoke

1/2 tsp oregano


For Serving

1/2 cup freshly chopped cilantro

2 medium Roma tomatoes diced

1/2 medium red onion diced

1/2 cup crumbled queso fresco

Corn or flour tortillas

Fresh lemon wedges


INSTRUCTIONS

In a mixing bowl, mix together garlic powder, salt, paprika, pepper, cayenne pepper, parsley, oregano, liquid smoke, lime juice, and olive oil. Pour over the chicken and coat in the marinade evenly.

Let marinate in the fridge for 1 hour.

Heat a large heavy skillet over medium-high heat. Cook chicken for 7-10 minutes per side, or until the internal temperature reaches 165 degrees Fahrenheit.

Remove from pan and let it rest for a couple of minutes, then chop chicken into small pieces.

Serve on warmed tortillas and top with desired toppings.
