Baked Mashed Potatoes with Parmesan Cheese and Bread Crumbs

Ingredients

2 pounds russet potatoes, peeled, cut into 1-inch pieces

1 cup whole milk

4 tbsp butter, melted

3/4 cup freshly grated mozzarella

1/2 cup freshly grated Parmesan

1 tsp salt and freshly ground black pepper to taste

For the topping:

2 tablespoons Italian-style bread crumbs 

1/4 cup freshly grated Parmesan

To Garnish:

Fresh parsley (optional)


Directions:

Preheat the oven to 400 degrees F. (200 degrees C.) Coat a baking dish with cooking spray and set aside. We used a 10.5 X 7.5 baking dish. If you are using a 9 X 13 baking dish, double the recipe.

Cook the potatoes in a large pot of boiling salted water until they are very tender, about 15-20 minutes. Drain; transfer the potatoes to a large mixing bowl and mash well. Mix in the milk and melted butter. Mix in the mozzarella and 1/2 cup of Parmesan. Taste and adjust salt and pepper if needed. Transfer the potatoes to the prepared baking dish. Stir the bread crumbs and remaining 1/4 cup of Parmesan in a small bowl to combine. Sprinkle the breadcrumb mixture over the mashed potatoes. This recipe can be prepared up to this point 6 hours ahead of time; cover and chill.

Bake, uncovered until the topping is golden brown, about 20 minutes.
