Ingredients
  

  • Yuca:2 lbs frozen yuca cassavaSalt for boiling
  • 2 lbs frozen yuca cassava
  • Salt for boiling
  • Mojo Sauce:⅓ cup olive oil6-8 garlic cloves minced¼ cup fresh lime juice (about 2-3 limes)1 small onion, thinly slicedSalt to tasteFresh parsley or green onion, finely chopped, for garnish

Method
 

  1. Step 1: Cook the Yuca
  2. Bring a large pot of salted water to a rolling boil.
  3. Add the frozen yuca and cook for 25 to 30 minutes, or until fork-tender.
  4. Drain the yuca and carefully remove any tough, fibrous cores from the center. Set aside.

Notes

Storage & Meal Prep
Refrigerator: Store leftovers in an airtight container for up to 3-4 days.
Freezer: Freeze in a sealed container for up to 2-3 months. Thaw overnight in the fridge.
Reheat: Warm in a skillet over medium heat, in the microwave, or in a 350°F oven until heated through.
