Method
- Peel and quarter green plantains. Boil in salted water 25-30 minutes until fork-tender.
- Soak sliced red onion in vinegar 10 minutes. Saute in olive oil 5 minutes until caramelized.
- Fry salami until crispy, about 2-3 minutes per side.
- Fry cheese until golden, 1-2 minutes per side.
- Fry eggs sunny-side-up in the same pan.
- Mash plantains with butter and reserved cooking water until creamy.
- Serve mangu topped with onions, with fried cheese, salami, and eggs on the side.
