The Dominican Burger That Makes American Burgers Look Boring (Chimichurri Recipe)

Ingredients
  

For the Mangu
  • 4 green plantains
  • 1 teaspoon salt
  • 2 tablespoon butter
  • ¼ cup reserved boiling water
For the Onions
  • 1 large red onion, thinly sliced
  • ¼ cup white vinegar
  • 2 tablespoon olive oil
For the Sides
  • 8 slices Dominican salami
  • 4 slices frying cheese
  • 4 large eggs
  • ¼ cup vegetable oil

Method
 

  1. Peel and quarter green plantains. Boil in salted water 25-30 minutes until fork-tender.
  2. Soak sliced red onion in vinegar 10 minutes. Saute in olive oil 5 minutes until caramelized.
  3. Fry salami until crispy, about 2-3 minutes per side.
  4. Fry cheese until golden, 1-2 minutes per side.
  5. Fry eggs sunny-side-up in the same pan.
  6. Mash plantains with butter and reserved cooking water until creamy.
  7. Serve mangu topped with onions, with fried cheese, salami, and eggs on the side.
