Ingredients
  

  • ½ cup 1 stick butter, at room temperature
  • 5 medium sweet potatoes
  • 2 large eggs
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • ½ cup milk
  • Pinch of salt

Method
 

  1. Preheat your oven to 350°F (177°C). Lightly grease a 9x13-inch baking dish with butter or cooking spray.
  2. Using a fork, pierce the sweet potatoes all over. Place them on a foil-lined baking sheet and bake for about 1 hour, or until tender.
  3. Once the sweet potatoes are cool enough to handle, peel them and transfer the flesh to a large mixing bowl. Mash until smooth.
  4. Add the eggs, granulated sugar, butter, vanilla extract, milk, and a pinch of salt to the mashed sweet potatoes. Use an electric mixer or hand mixer to blend until well combined.
  5. Pour the sweet potato mixture into the prepared baking dish and spread it evenly.
