Ingredients
  

  • 2 cups shredded cooked chicken
  • 1 cup black beans, drained and rinsed
  • 1 cup frozen corn, thawed
  • 1 cup shredded Mexican blend cheese
  • ½ red bell pepper, diced
  • 2 green onions, sliced
  • 1 tablespoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 12 egg roll wrappers
  • Cooking spray
  • Avocado ranch dressing for dipping

Method
 

  1. In a large bowl, combine chicken, black beans, corn, cheese, red pepper, green onions, and all seasonings.
  2. Place an egg roll wrapper on a flat surface in a diamond shape.
  3. Add about 3 tablespoons of filling to the center.
  4. Fold the bottom corner up, fold in the sides, then roll tightly toward the top corner. Seal with a dab of water.
  5. Repeat with remaining wrappers and filling.
  6. Spray egg rolls generously with cooking spray on all sides.
  7. Place in air fryer basket in a single layer. Air fry at 380°F for 8-10 minutes, flipping halfway.
  8. Serve hot with avocado ranch dressing for dipping.
