Quick and Easy Sausage and Peppers

Versatile Dish: This sausage and peppers recipe is highly versatile. You can use either hot or sweet Italian sausages based on your preference and add different vegetables like mushrooms or zucchini to enhance the flavor and nutrition.

Ingredients
  

  • 6 hot Italian sausages
  • 6 crusty Italian rolls
  • 1 red bell pepper sliced
  • 1 green bell pepper sliced
  • 1 large yellow onion sliced
  • 4 garlic cloves minced
  • 1 tablespoon oregano
  • Kosher salt and black pepper to taste
  • Olive oil

Method
 

  1. Slice red and green bell peppers and onion.
  2. In a skillet over medium-high heat, add olive oil and cook sausages until browned on all sides. Remove and set aside.
  3. In the same skillet, add sliced vegetables. Season with salt, pepper, and oregano. Sauté for 5 minutes.
  4. Add minced garlic and continue to sauté for another 2-3 minutes.
  5. Return sausages to the skillet, reduce heat to medium, and cook for an additional 15-20 minutes until sausages are fully cooked.
  6. Place sausages and peppers in crusty Italian rolls and serve hot.

Notes

Storage & Meal Prep

Freezer: Freeze in a sealed container for up to 2-3 months. Thaw overnight in the fridge.
Reheat: Warm in a skillet over medium heat, in the microwave, or in a 350°F oven until heated through.
