Ingredients
  

  • 2 lbs baby potatoes
  • 1 tablespoon olive oil
  • 5 garlic cloves
  • 3 sprigs rosemary
  • 3 sprigs thyme
  • 1 stick butter

Method
 

  1. Preheat oven to 350F.
  2. Boil potatoes with salt for 15 minutes until cooked. Drain and cool in ice bath.
  3. Gently smash each potato with a masher to break the surface.
  4. Arrange on a parchment-lined roasting tray.
  5. Simmer butter with garlic, rosemary, thyme, and olive oil to infuse.
  6. Brush infused butter over potatoes.
  7. Bake 45-50 minutes until golden and crispy.
