Ingredients

  • 3 cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 2 cups granulated sugar
  • 2 teaspoons vanilla extract
  • 1 ½ cups whole milk at room temperature
  • 2 cups unsalted butter at room temperature
  • 8 cups powdered sugar
  • ½ cup heavy cream
  • 2 teaspoons vanilla extract
  • Gradually add powdered sugar about 1 cup at a time, mixing well after each addition.

Method

  1. Can I substitute butter with margarine in this recipe? Butter is recommended for the best flavor and texture, but margarine can be used if necessary.
  2. How can I prevent the cake from sticking to the pans? Grease the pans well and line them with parchment paper for easy removal.
  3. Is it necessary to use all six colors for the layers? No, you can customize the colors to your preference or the theme of your event.
  4. How do I achieve smooth frosting on the outside of the cake? Use a crumb coat first and chill the cake, then apply a final layer of frosting and smooth it with an offset spatula.
  5. What’s the best way to slice the cake to keep the layers neat? Use a sharp, serrated knife and wipe it clean between cuts for the best presentation.

  10. In a large mixing bowl, beat butter and sugar on medium-high until fluffy (3-5 minutes).
  11. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  12. On low speed, add flour mixture in three parts, alternating with milk, starting and ending with flour. Mix until just combined.
  13. Divide batter evenly into six bowls.
  14. Add food coloring to each bowl, creating red, orange, yellow, green, blue, and purple batters. Mix until colors are vibrant.
  15. Pour each colored batter into prepared pans.
  16. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  17. Cool cakes in pans for 10 minutes, then transfer to a wire rack to cool completely.
  18. In a large bowl, beat butter on medium speed until creamy.
  19. Add heavy cream, vanilla extract, and salt. Beat on high speed for about 3 minutes until light and fluffy.
