Ingredients

  • 1 ½ cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 1 packet active dry yeast
  • 4 ½ cups all-purpose flour
  • 2 tablespoons unsalted butter, melted
  • 10 cups water
  • ⅔ cup baking soda
  • 1 egg, beaten (for egg wash)
  • Coarse sea salt for topping

Method

  1. Combine warm water, sugar, and salt in a bowl. Sprinkle yeast on top and let sit 5 minutes until foamy. Add flour and melted butter, mix until a dough forms. Knead for 5 minutes until smooth. Cover and let rise for 1 hour.
  2. Divide dough into 8 equal pieces. Roll each piece into a 24-inch rope. Shape into a pretzel by forming a U-shape, crossing the ends, and pressing them onto the bottom of the U.
  3. Preheat oven to 425°F. Bring 10 cups of water to a boil, add baking soda. Boil each pretzel for 30 seconds, then remove with a slotted spoon.
  4. Place boiled pretzels on a parchment-lined baking sheet. Brush with beaten egg and sprinkle with coarse salt. Bake for 12-14 minutes until golden brown.
  5. Serve warm with mustard, cheese sauce, or your favorite dipping sauce.
