Hígado Guisado (Dominican Liver Stew)

Ingredients
  

  • 2 lbs beef liver (grass-fed preferred)
  • 7 garlic cloves
  • ½ teaspoon oregano
  • 1 teaspoon salt
  • ½ red bell pepper
  • ½ green bell pepper
  • 1 red onion
  • 2 tablespoon fresh cilantro
  • 1 packet of sazon
  • ½ teaspoon adobo
  • Black pepper to taste
  • 2 tablespoon olive oil
  • 1 cup chicken stock
  • 1 tablespoon tomato paste

Method
 

  1. Cut liver into 2-inch pieces.
  2. Mash garlic, oregano, and salt into a paste.
  3. Marinate liver with garlic paste, sazon, adobo, and pepper for at least 1 hour.
  4. Saute liver in olive oil over medium-high heat for 15 minutes until browned.
  5. Add chicken stock and tomato paste. Simmer on medium-low for 25 minutes.
  6. Add onion and peppers. Simmer until vegetables soften.
  7. Garnish with fresh cilantro and serve.
