Ingredients
  

  • 1 lb pasta cooked
  • 1 block Greek feta cheese
  • ½ cup olive oil
  • 1 red chili pepper sliced
  • 1 lb cherry tomatoes
  • 4 garlic cloves minced
  • teaspoon salt
  • Black pepper to taste
  • Fresh basil leaves chopped

Method
 

  1. Preheat Oven: Set your oven to 400°F (200°C).
  2. Prepare Ingredients: In a large baking dish, add feta cheese, cherry tomatoes, garlic, red chili pepper, and olive oil. Season with salt and black pepper.
  3. Bake: Place the dish in the oven and bake for 15 minutes. Then, switch to broil for an additional 3-5 minutes until the tomatoes are blistered and the feta is golden.
  4. Combine: Remove from the oven and mash the feta and tomatoes together to create a creamy sauce.
  5. Finish & Serve: Add fresh basil leaves and cooked pasta. Mix well until evenly coated. Serve immediately.

Storage & Meal Prep

Freezer: Freeze in a sealed container for up to 2-3 months. Thaw overnight in the fridge.
Reheat: Warm in a skillet over medium heat, in the microwave, or in a 350°F oven until heated through.
