Ingredients
  

  • 6 catfish fillets
  • 2 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper optional
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon thinly sliced
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a small bowl, combine the olive oil, minced garlic, paprika, thyme, oregano, cayenne pepper (if using), salt, and black pepper. Mix well to form a paste.
  3. Pat the catfish fillets dry with paper towels. Place them on the prepared baking sheet. Brush both sides of each fillet with the olive oil mixture, ensuring they are evenly coated.
  4. Arrange the lemon slices on top of and around the fillets. This will add a fresh citrus flavor during baking.
  5. Bake the catfish fillets in the preheated oven for about 20-25 minutes, or until the fish is opaque and flakes easily with a fork. Cooking time may vary depending on the thickness of the fillets.
  6. Once the catfish fillets are done, remove them from the oven. Garnish with chopped fresh parsley.
