Ingredients
  

  • 1 and ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • Zest of one orange (reserve 1 teaspoon)
  • ¼ cup fresh orange juice
  • ¼ cup whole milk
  • ¾ cup granulated sugar
  • 6 tablespoons room temperature unsalted butter
  • 2 large eggs
  • 1 and ½ cups cranberries, cleaned

Method
 

  1. - Preheat the oven to 350°F (177°C).
  2. - Grease and flour a bread loaf pan, removing excess flour.
  3. - In a bowl, whisk together 1 and ½ cups all-purpose flour, 1 teaspoon baking powder, and ¼ teaspoon salt. Set aside.
  4. - In another bowl, combine orange zest (reserving 1 teaspoon), ¼ cup fresh orange juice, and ¼ cup whole milk. Mix well and set aside.
  5. - In a large mixing bowl, cream together ¾ cup granulated sugar and 6 tablespoons of room temperature unsalted butter for about 3 minutes at medium speed.
  6. - Add two large eggs and mix until well combined.
  7. - Add the flour mixture and the milk-orange juice mixture to the large bowl, mixing just until combined.
  8. - Coat 1 and ½ cups of cleaned cranberries with ½ tablespoon of all-purpose flour to prevent sinking. Fold them into the batter.
  9. - Transfer the batter to the prepared pan and spread it evenly.
  10. - Bake at 350°F for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
  11. - Let the cranberry bread rest in the pan for 10 minutes before transferring to a wire rack. Use an offset spatula or knife to loosen the edges.
  12. - In a small bowl, combine a couple of tablespoons of orange juice, 1 cup of powdered sugar, and the reserved teaspoon of orange zest. Adjust the consistency with more juice or sugar.
  13. - Once the bread has cooled, drizzle the glaze over the top.
