- - Preheat the oven to 350°F (177°C).
- - Grease and flour a bread loaf pan, removing excess flour.
- - In a bowl, whisk together 1 and ½ cups all-purpose flour, 1 teaspoon baking powder, and ¼ teaspoon salt. Set aside.
- - In another bowl, combine orange zest (reserving 1 teaspoon), ¼ cup fresh orange juice, and ¼ cup whole milk. Mix well and set aside.
- - In a large mixing bowl, cream together ¾ cup granulated sugar and 6 tablespoons of room temperature unsalted butter for about 3 minutes at medium speed.
- - Add two large eggs and mix until well combined.
- - Add the flour mixture and the milk-orange juice mixture to the large bowl, mixing just until combined.
- - Coat 1 and ½ cups of cleaned cranberries with ½ tablespoon of all-purpose flour to prevent sinking. Fold them into the batter.
- - Transfer the batter to the prepared pan and spread it evenly.
- - Bake at 350°F for 45 to 50 minutes or until a toothpick inserted in the center comes out clean.
- - Let the cranberry bread rest in the pan for 10 minutes before transferring to a wire rack. Use an offset spatula or knife to loosen the edges.
- - In a small bowl, combine a couple of tablespoons of orange juice, 1 cup of powdered sugar, and the reserved teaspoon of orange zest. Adjust the consistency with more juice or sugar.
- - Once the bread has cooled, drizzle the glaze over the top.
