Ingredients
  

  • 1 cup 230g unsalted butter, room temperature
  • 1 cup 200g packed light brown sugar
  • ½ cup 100g granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups 190g all-purpose flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon salt
  • 3 cups 270g old-fashioned rolled oats
  • 1 cup 150g raisins
  • ½ cup 60g chopped walnuts (optional)

Method
 

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, cream together the butter, brown sugar, and granulated sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla.
  3. In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the butter mixture until just combined.
  4. Stir in the oats, raisins, and walnuts (if using) by hand until evenly distributed.
  5. Drop dough by rounded tablespoonfuls onto the prepared baking sheets, spacing about 2 inches apart. Bake for 10 to 12 minutes, or until the edges are golden and the centers are still slightly soft.
  6. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
