Bacon-Wrapped Meatloaf Recipe

Ingredients
  

  • 1 pound ground beef 80/20
  • Fresh spinach
  • Bacon slices
  • Cheese
  • Ham
  • 1 cup Italian seasoned breadcrumbs
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon garlic powder
  • 2 eggs

Method
 

  1. Preheat oven to 350°F.
  2. In a mixing bowl, combine ground beef, Italian seasoned breadcrumbs, eggs, salt, black pepper, and garlic powder. Mix until well combined.
  3. Shape the ground beef mixture into a rectangle on a piece of aluminum foil.
  4. Layer ham, cheese, and spinach over the ground beef rectangle.
  5. Carefully roll up the meatloaf.
  6. Lay out bacon slices on another piece of aluminum foil.
  7. Place the rolled-up meatloaf on top of the bacon slices and roll up again.
  8. Transfer the meatloaf onto a baking dish and cover with aluminum foil.
  9. Bake in the preheated oven for 25 minutes.
  10. After 25 minutes, remove the aluminum foil covering the meatloaf and increase the oven temperature to 500°F.
  11. Bake uncovered for another 25 minutes.
  12. Remove from the oven and let it rest for a few minutes before slicing.
  13. Serve with zucchini noodles or your favorite side dish.
