Authentic Bacalaitos - The Ultimate Puerto Rican Recipe

Ingredients
  

  • 24 oz cod fillets (two 12 oz packets)
  • 2 cups all-purpose flour
  • 3 cubes sofrito (or 3 tablespoons)
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 teaspoon Adobo seasoning
  • 1 packet Sazon
  • ½ teaspoon black pepper
  • 1.5 cups cold water
  • Vegetable oil for frying

Method
 

  1. Rinse cod under cold water to remove excess salt.
  2. Boil fish in water for 20 minutes.
  3. Transfer to mixing bowl. Add flour, sofrito, baking powder, garlic powder, paprika, Adobo, Sazon, pepper, and water. Mix to pancake batter consistency.
  4. Heat oil to 350F. Fry bacalaitos 5-7 minutes per side until golden.
  5. For air frying: preheat to 320F, air fry 20 minutes, flipping halfway.
  6. Drain on paper towels. Serve warm.
