8 cups chicken broth
4 cups water
5 stems of scallion whites
2 cloves garlic
1 tsp soy sauce
1.5 tsp Shaoxing wine
1 tsp sesame oil
1 tsp sugar
2 baby bok choy

For the Wonton Dumplings:
8 oz pork (minced)
5 jumbo shrimp (minced)
1 tsp soy sauce
1 tsp Shaoxing wine
1/2 tsp sesame oil
1/4 tsp ginger paste
2 garlic cloves (grated)
1/4 tsp white pepper
1 scallion (minced)
2 tsp cornstarch
25 to 30 wonton wrappers
Directions
Prepare Broth: In a 6-quart pot, add chicken broth, water, scallion whites, garlic, cooking wine, soy sauce, sugar, salt, and sesame oil. Bring to a gentle boil and simmer for 30 minutes.
Prepare Dumplings: In a bowl, combine minced pork, minced shrimp, scallions, soy sauce, cooking wine, sesame oil, pepper, and cornstarch. Add 1 tsp of the meat mixture to the center of a wonton wrapper, wet the edges, fold, and seal.
