Do I need to use yellow food coloring?

No. The food coloring only adds vibrant color to the dough. It doesn’t affect how they taste.

Do I need to refrigerate the dough before baking?

Yes! Without refrigeration, the cookies will be flat and not crinkled on top. Refrigerate for at least 1 - 2 hours or overnight.

Most Incredibly Delicious Soft Lemon Cookies

These soft lemon cookies are incredibly delicious and so addicting!


Makes 12-14 cookies

Ingredients:

5 Tbsp butter softened

1/2 cup of white sugar

1 large egg

The zest of 1 lemon

The juice of 1 lemon

20 drops yellow food coloring

1-1/4 cup all-purpose flour

1 tsp baking powder

1/4 tsp salt

1/3 cup powdered sugar


Instructions:

1. In a medium bowl, cream butter and sugar together until light and fluffy. Add egg and lemon zest and mix until well combined. Add yellow dye and lemon juice and mix well. Scrape sides and mix again.


2. Stir in flour, salt, and baking powder until just combined. Scrape sides of the bowl and mix again briefly.


3. Cover the bowl and place it in the fridge for 1 to 2 hours. In the meantime, in a small bowl put powdered sugar and set aside. Line a large baking sheet with parchment paper and set it aside.


4. After cookie dough has been chilled, roll about 2 Tbsp of dough into a ball and roll in powdered sugar. Place on the baking sheet a few inches apart and repeat with the remaining dough.


5. Bake at 350 F for 12 minutes. Allow them to cool before eating.
