Creamy Scallop Pasta Easy

Creamy Scallop Pasta Recipe

Ingredients

12 ounces pasta

2 tablespoons vegetable oil

1 pound bay scallops

2 tablespoons butter

1/2 medium-size onion

6 cloves garlic, minced

The zest of one lemon

1/2 tsp red pepper flakes

⅓ cup white wine

1 cup heavy cream

salt and pepper to taste

1 lemon, juiced

1 tablespoon chopped Italian parsley

Freshly grated Parmigiano-Reggiano cheese


Instructions

Step 1

Bring a large pot of lightly salted water to a boil. Cook pasta in the boiling water, stirring occasionally until tender yet firm to the bite, about 10 minutes or 1 minute less than directed on the package.


Step 2

Heat oil in a large skillet over high heat. When oil just starts to smoke, add scallops, and move them into a single layer. Let sear on high for 4 - 5 minutes. Then remove from the skillet and set them aside. Add onion and saute until translucent. Add butter and stir until butter melts. Stir in garlic. Add lemon zest and red pepper flakes. Stir in white wine and cook and stir until the alcohol cooks off about 1 minute. Pour in the cream. When the mixture begins to simmer, reduce heat to medium-low. Add salt, pepper, and lemon juice.


Step 3

Drain pasta. Transfer to a skillet with scallops; bring to a simmer. Add the parsley. Bring the scallops back into the skillet. Cook until pasta is heated through and tender, about 1- 2 minutes. Grate generously with grated cheese. Remove from heat and serve.
