For the Chicken:
2 lbs chicken breasts (4 medium/large chicken breasts)
1 tsp garlic salt (or to taste)
1/4 tsp black pepper (or to taste)
1/2 cup pesto sauce (about 8 Tbsp total)
8 oz mozzarella cheese, shredded (reserve 2 oz for topping)
2 medium tomatoes, thinly sliced into 16 rings
1 cup cherry tomatoes (optional)
1 Tbsp fresh basil leaves, shredded (optional garnish)
1 Tbsp olive oil
1 Tbsp unsalted butter
Instructions
Preheat Oven and Prepare Chicken:
Preheat the oven to 425°F (220°C).
Slice each chicken breast in half lengthwise to make 8 thin cutlets.
Pound each cutlet to about 1/8" thick using a quart-sized Ziploc bag or between plastic wrap.
Season both sides with garlic salt and black pepper.
Fill and Roll the Chicken:
Spread 1 Tbsp pesto in the center of each cutlet.
Top with 2 tomato slices and sprinkle with 2-3 Tbsp mozzarella cheese.
Roll the chicken tightly and secure with toothpicks.
Sear the Chicken:
Heat a large oven-safe skillet over medium-high heat with olive oil and butter.
Add the chicken roll-ups and sear for 4 minutes per side, until golden brown.
Bake the Roll-Ups:
Sprinkle the remaining mozzarella cheese on top.
Add cherry tomatoes around the chicken (if using).
Transfer the skillet to the oven and bake for 13-15 minutes, until the chicken's internal temperature reaches 160°F (70°C).
