The Most Amazing Octopus Salad
Most people I know who love octopus salad usually make the salad from a canned octopus. However, why use canned octopus when you can make fresh octopus easily at home and the result is a thousand percent better.
An octopus is a soft-bodied, eight-limbed mollusk of the order Octopoda. The order consists of some 300 species and is grouped within the class Cephalopoda with squids, cuttlefish, and nautiloids.
What is an Octopus?
Octopus is an excellent source of omega-3 fatty acids, "good fats" linked to a range of heart-healthy benefits. Omega-3s can lower your blood pressure and slow the buildup of plaque in your arteries, reducing stress on the heart

The Most Amazing Octopus Salad
Ingredients
1 octopus about 4 lbs
1/2 medium-sized onion, diced
1/2 red, green, and yellow bell peppers, diced
2 cloves of garlic, minced
10 green olives, sliced
3/4 olive oil
4 tbsp vinegar
2 lime, juiced
2 tbsp fresh cilantro
salt and pepper to taste
To Cook The Octopus:
2 bay leaves
1/2 medium-size onion
2 cloves of garlic
1 tsp of kosher salt or to taste
Pot of water
Directions:
Boil the octopus in salted water over low heat for 50 - 55 minutes.
Cut into bite-sized pieces
In a container, beat the vinegar, lemon juice, and oil until emulsified.
Add the rest of the ingredients and toss.
Refrigerate for at least 4 hours before serving.
Keep the salad in the fridge at all times.
