Savory Grass Fed Beef Liver Stew

This Liver recipe is the way I grew up eating liver stew as a child. I hope you and your family enjoy this recipe!

Beef Liver

The Benefits of Eating Liver are abundant and very well documented. The liver is nature’s most concentrated source of vitamin A; it is also abundant in B12 and other B vitamins, plus iron, choline, copper, folic acid, purines, and natural cholesterol. It’s also a fantastic source of magnesium and phosphorus. The liver has also been shown to contain a not-yet-identified anti-fatigue factor.


Can beef liver be eaten everyday?

Even though liver is incredibly healthy and nutritious, it should not be consumed daily. Eating it once per week is enough. Bottom Line: Liver contains many essential nutrients.

Savory Grass-Fed Beef Liver Stew


Ingredients:

2 lbs beef liver (grass-fed preferred)

7 garlic cloves

1/2 tsp oregano

1 tsp salt

1/2 red bell pepper

1/2 green bell pepper

1 red onion

2 tbsp fresh cilantro

1 packet of sazon

1/2 tsp adobo

Black pepper to taste

2 tbsp olive oil

1 cup chicken stock

1tbsp tomato paste


Directions:


1. Cut the liver into 2-inch bite-size pieces

2. In a mortar add garlic, oregano, and salt, and mash until it turns into a paste

3. In a large mixing bowl add the liver, garlic paste, sazon, adobo, and black pepper. Keep in the fridge and let it marinate for at least one hour

4. In a skillet over medium-high heat add olive oil

5. Sauté the liver for about 15 minutes or until it develops a brown color and most of its moisture has been released

6. Then add chicken stock and tomato paste

7. Reduce the heat to medium-low and let it simmer for about 25 minutes (you may add more chicken stock or water if it drys out too quickly)

8. add onion and peppers and continue simmering until the vegetables are softened

9. At this point, you may taste and adjust salt and pepper to your licking

10. Garnish with fresh cilantro and serve
