How to Make Spanish Sofrito
Sofrito is a sauce used as a base in Spanish, Italian, Portuguese, and Latin American cooking. Preparations may vary, but it typically consists of aromatic ingredients cut into small pieces and sauteed or braised in cooking oil.
Do you have to refrigerate sofrito?
I usually freeze my sofrito by placing it in an ice cube tray, so I have individual softio cubes when needed. Each sofrito cube is about one tablespoon.
Does sofrito need to be cooked?
Yes. The word sofrito is in Spanish and means to lightly fry something, such as by sautéing or stir-frying.

How to Make Spanish Sofrito
Ingredients:
1 bundle of cilantro
1 bundle of parsley
1 bundle of scallion
1 large white onion
1 large red onion
2 yellow sweet peppers
2 red peppers
2 green peppers
1 jalapeno pepper “optional”
14 garlic cloves
1 tbsp of paprika
1 tbsp of oregano
1 tsp of salt
2 rosemary branches are “optional”
Instructions:
1 add about half of the ingredients into a food processor and process for about 1 minute
2 add the rest of the ingredients and process for another minute, and the Sofrito is done
3 keep refrigerated or for best result freeze in ice cube trays to preserve it.
4 use the soffit cubes as needed. You may use them in beans, soups, rice, meats, etc
5 enjoy your Spanish sofrito!
