Yield: 2 servings

Ingredients

2 bags Tazo Passion herbal tea (or similar passion fruit/hibiscus tea)

1 cup hot water

1 cup coconut milk (from a carton, not canned)

2 tablespoons white grape juice or simple syrup

1/2 teaspoon vanilla extract

1/2 cup freeze-dried strawberries or 4 fresh strawberries, sliced

Ice

Instructions

Steep the two passion tea bags in 1 cup of hot water for 5 minutes. Remove the tea bags and let the tea cool completely. You can speed this up by placing it in the refrigerator or adding a handful of ice cubes to cool it down quickly.

Fill two tall glasses with ice all the way to the top.

Divide the cooled tea evenly between the two glasses.

Add half of the coconut milk to each glass. Stir in 1 tablespoon of white grape juice and 1/4 teaspoon of vanilla extract per glass.

Drop in the freeze-dried strawberries or fresh sliced strawberries. Give it a gentle stir and serve immediately with a straw.

Kelvin Tips

Make sure the tea is completely cooled before mixing. If you pour hot tea over ice, it will melt the ice and dilute the flavor. Chilling the tea first keeps the drink perfectly balanced.

Use coconut milk from a carton, not canned. Canned coconut milk is too thick and heavy for this drink. The carton version is lighter and gives that smooth, creamy texture without overwhelming the flavor.

Freeze-dried strawberries are the secret to the authentic look. They float beautifully in the drink and slowly rehydrate, releasing strawberry flavor as you sip. You can find them in the snack aisle at most grocery stores.

Make a big batch of the tea ahead of time and keep it in the fridge. Then you can whip up pink drinks all week long in seconds.
