How Long Can Eggs Sit Out? Safe Storage Tips Every Cook Should Know

You grab eggs for baking, get distracted, and come back hours later like...
“Wait. Can I still use these?”

Or maybe you’re meal prepping and want to leave eggs out for easier cracking. Either way — it’s time to clear up the egg confusion once and for all.

🥚 The Safe Time Limit
According to the USDA:

Eggs should not be left unrefrigerated for more than 2 hours.
If the room is above 90°F (like a summer kitchen)?
Cut that time to just 1 hour.

Beyond that, the risk of bacterial growth — especially Salmonella — increases quickly.

❄️ Why U.S. Eggs Must Be Refrigerated
In the U.S., eggs are washed before they hit store shelves. This removes a natural protective coating called the “bloom.”

Result? They’re more vulnerable to bacteria and must stay cold.

Eggs from Europe or farmers markets (that haven’t been washed)? Different story. But for store-bought U.S. eggs: keep them in the fridge at all times.

📦 How to Store Eggs Properly
✅ Keep them in the original carton — it protects them and reduces moisture loss.

✅ Store on a middle shelf, not the door (door temps fluctuate too much).

✅ Don’t wash them at home — they’re already cleaned and sanitized by law.

Shelf life in the fridge? About 3–5 weeks.

🧪 How to Tell If an Egg Has Gone Bad
Not sure if that egg on the counter is still good? Try these tests:

  1. Float Test
    Place the egg in a bowl of cold water:

  • Sinks = fresh

  • Tilts = still usable

  • Floats = toss it

  1. Sniff Test
    Crack it into a bowl — if it smells like sulfur or anything funky, it’s bad.

  2. Visual Check
    Look for cloudy whites, pinkish hues, or any mold near the shell or inside.

🤔 Can You Leave Eggs Out to Reach Room Temperature?
Yes — for baking, it’s okay to let eggs sit out for 30–60 minutes before use.
But don’t forget about them!

✅ Set a timer. Once they hit the 2-hour mark (max), it’s toss time.

Eggs are cheap, but food poisoning is expensive (and not fun).
When in doubt, toss it out — and always store eggs cold, clean, and smart.
